Can it be true?!... A Vegan cheese cake!?
Created from tofu, 2 bars dark chocolate, dark chocolate spread, margarine and caster sugar. All blended together with a hand blender till smoooooth :) For the base- digestive biscuits crushed and mixed with margarine.

Recipe
Base:
300g digestive biscuits
200ml marg
1tsp cinnamon
Filling:
1block tofu
1tso chocolate powder
2tbsp dark chocolate spread
1tbsp marg
4tbsp caster sugar
2 bars dark choc
The base:
- Smash up digestive biscuits in a bag until smashed to smithereens!
- Mix with tsp cinnamon and 150-200ml melted marg.
- Press into lined tin and refrigerate while you prepare the filling.
- Pat tofu dry then in a large bowl, mash a little
- Melt 2 bars dark choc, 2 tbsp dark choc spread and 1tbsp marg then mix into tofu
- Use hand blender to get desired consistency. Add choc powder and sugar, 1tbsp at a time until you see it starting to thicken.
** For a firmerfilling, use less marg and more tofu
Assembling:
Get the base you prepared earlier. Spread a thin layer of the dark choc spread on, then pour in the chocolate tofu mixture. Leave until completely chilled (2-3 hrs)
