Waistcoat bargain!

Got to love charity/thrift shops!! Got this waistcoat for about £2 and a little slinky, wine coloured top with sequins around straps for about £1.50!!!

My morning today. Brushing up on my Japanese while i wait for my swedish language pack to arrive! Got books from Waterstones.
Had a lovely soy hot chocolate. LARGE of course!! :)

Recycled shirt to halter dress

Carrot & sweet potato soup

2 sweet potatoes, diced
1 red onion, diced
1 garlic clove, diced
2 carrots, diced
Tsp stock
1/2 Tsp pepper
1 Tsp parsley

* Boil water then add in your veggies and simmer. Try not to boil veggies as it will impair it's flavour.

* Add in stock then parsley & pepper.

* Use hand blender and whizzed veggies and water together.

Fake steak and scrambled tofu

A friend gifted Matt & myself some fake steak from the VX shop (secret society of vegans).
Scrambled up tofu, cooked on high for about 10th mins until started to change colour. Add in 1/2 top tumeric, salt & pepper. I then added in the sliced fake-steak in a pan with the tofu and cooked on each side for a few minutes or until slightly browned.
Delicious with ketchup!!  ( yes, i'm a ketchup fiend!! ) :D

The Vegan Festive Dinner

Bought in some special items from the lcoal Holland & Barratt- mock 'beef' sunday roast, Redwood bacon, Linda McCartney rosemary sausages, asda's own stuffing, homemade roast potatoes and steamed vegetables. Also made some yorkshire puddings with some egg replacer. (A simple recipe i'll share soon) my non - Vegan and slightly fussy brother is now addicted to  them. They may not rise as much but they taste immense. The dinner was absolutely gorgeous!!

Death-by-chocolate 'cheese' cake

Can it be true?!...  A Vegan cheese cake!?
Created from tofu, 2 bars dark chocolate, dark chocolate spread, margarine and caster sugar. All blended together with a hand blender till smoooooth :) For the base- digestive biscuits crushed and mixed with margarine. 

Vegan death-by-chocolate 'cheese' cake
Recipe

Base:
300g digestive biscuits
200ml marg
1tsp cinnamon

Filling:
1block tofu
1tso chocolate powder
2tbsp dark chocolate spread
1tbsp marg
4tbsp caster sugar
2 bars dark choc

The base:
  • Smash up digestive biscuits in a bag until smashed to smithereens!
  • Mix with tsp cinnamon and 150-200ml melted marg.
  • Press into lined tin and refrigerate while you prepare the filling.
The Filling:
  • Pat tofu dry then in a large bowl, mash a little
  • Melt 2 bars dark choc, 2 tbsp dark choc spread and 1tbsp marg then mix into tofu
  • Use hand blender to get desired consistency. Add choc powder and sugar, 1tbsp at a time until you see it starting to thicken.
** For a firmerfilling, use less marg and more tofu

Assembling:

Get the base you prepared earlier. Spread a thin layer of the dark choc spread on, then pour in the chocolate tofu mixture. Leave until completely chilled (2-3 hrs)
